When bartenders discuss the perfect cocktail, ice often plays a key role. A recent test by the Good Housekeeping Institute found that the clearest cubes come from a simple directional-freezing method.

Controlled lab trials reveal differences

The institute conducted a comparison in its Appliances and Innovation Lab. Both ordinary ice trays and a specialized directional-freezing tray were used. Four water sources—spring, distilled, tap, and boiled tap—filled each mold and froze overnight.

None of the waters produced a perfectly transparent block in a standard tray. All samples had clear edges with a cloudy core, indicating trapped air or tiny mineral particles during freezing.

Directional freezing produces clearer ice

The same waters frozen in the directional tray showed a noticeable improvement. Spring water created the brightest, most uniform cubes. Tap water and its boiled version followed, with only minor bubbles or cracks. Distilled water, despite its purity, developed visible fissures in each piece.

Ice was removed at intervals—immediately, after five, ten, and fifteen minutes—to observe changes. Spring water cubes stayed the clearest, while others grew slightly cloudier over time.

A tablespoon of whiskey poured over both tray types revealed no major flavor difference. Testers noted the directional-freezing cubes melted more slowly, which may enhance the drinking experience.

The impact of slower melting

Ice that melts gradually helps maintain a cocktail’s alcohol strength longer. One reason is the shape of directional cubes, which have a larger top surface and flatter bottom, reducing contact with the liquid compared to standard cubes.

Clear ice is often thought to lack impurities that could affect taste. However, the institute’s panel found no significant difference between clear and cloudy ice in flavor.

How directional freezing works

The method replicates natural lake freezing, where water solidifies from the top down, pushing gases and minerals to the bottom. The directional tray includes extra space beneath the mold, allowing sediments to settle before the upper portion freezes into a clear block. To use the method, fill the tray, place it in a freezer at a stable temperature, and wait overnight. The clear portion can then be removed, leaving cloudy residue behind.

Tips for home use

    • Spring water yields the best results, though boiled tap water also works.
    • Select a tray designed for directional freezing, which has extra space beneath the mold.
    • Let ice rest a few minutes after removal to reduce surface frost.
    • Store cubes in a sealed container to prevent freezer burn.
