The Sauce Recipe

Cruz’s recipe also includes instructions for cooking the perfect steak to go along with the sauce. The steak should be grilled to medium-high heat and cooked until it reaches an internal temperature of about 125°F for medium-rare.

To cook the steak, pat it dry with a paper towel and drizzle with oil. Season with salt and pepper all over, then grill until grill marks are formed and the steak is about halfway cooked.

Flip the steak and cook until it’s fully cooked, then set it aside to rest for 10 minutes. Once the steak has rested, slice it against the grain and sprinkle with flaky salt.

Serve the steak with the green tomato crying tiger sauce and a side of rice. They use toasted rice powder in the sauce, made by toasting uncooked rice in a dry pan over medium heat until it’s very dark brown, then crushing it with a mortar and pestle to the consistency of fine breadcrumbs.
